Shibui (渋い) is a Japanese concept with no direct translation.

We chose this word because it describes exactly what we believe about coffee and tea.
The problem with most coffee in Europe
The world produces extraordinary coffee and tea. Ethiopian highlands growing beans with natural blueberry and jasmine notes. Colombian mountains where altitude creates complexity no roaster can replicate. Japanese tea gardens producing matcha that has been perfected over centuries. Chinese valleys where pu-erh ages like fine wine.
Most of it never reaches Europe intact. Too many intermediaries. Too much compromise. By the time it arrives, the story has been lost.
What Shibui does differently
