The most innovation-driven coffee region in Costa Rica, producing only Strictly Hard Bean — the highest quality classification the country awards, reserved for coffee grown above 1,200 metres where the cold slows everything down and forces the bean to develop properly. No shortcuts. No compromises.
The honey process does something specific here. After harvesting, 70% of the mucilage — the sweet, sticky layer surrounding the bean — is left intact during drying. It ferments slowly in the sun, transferring its sugars directly into the bean. The result is a natural sweetness that no roaster adds and no recipe replicates.
In the cup: smooth and medium-bodied, with a bright acidity that keeps it alive and a balanced sweetness that makes it effortless. The kind of coffee that works at any hour, with anything, and never gets in the way.
